PuraVida Chicken

Do not add bacon and Chicken and get a wonderful vegetarian dish! 🙂

I discovered green mangoes in Costa Rica and decided to make Pura Vida Chickpea Salad.
Adjust chicken and fruit for the amount of people eating this serving is good for two.
1 cup blueberry
1 avocado
1 can chickpeas
2 limes squeezed
Sea salt & pepper to taste
1 large papaya
2 green mangoes peeled and sliced
2 cup cilantro chopped
1/2 cup Olive oil
1 6 oz chicken breast
3 slices of bacon


Marinade chicken for 20 minutes in 1 lime and 1/4 cup olive oil with 1 cup cilantro salt and pepper. Char grill sliced breast for 10 to 15 minutes. fry bacon and set aside. Peel and chop fruits and veggies. In blender combined 3 slices of mango and papaya 1 cup cilantro, 1/4 cup oil 1 tablespoon sea salt blend. Put mixture in squirt bottle for extra fanciness.
Add a pinch of salt to the end and best-served cold.
Toss all together.
