Who doesn’t like breakfast? Except one of the two roommates. 🙂 As I continue on my cooking contest quest I bring to you Jones Dairy Farm Rise, Sizzle & Shine breakfast recipe contest. I am entering a Stuffed Portable Mushroom with Jones Dairy Farm sausage and ingredients from my CSA!

Breakfast Stuffed Mushroom


4 medium size Portabella Mushrooms
1 zucchini
1 Medium Sweet potato
1 cup shredded Mozzarella
1/4 cup fresh Basil
1 tsp salt
1 tsp pepper
1 package Jones Dairy Farm  All Natural Patty
7 eggs
1/2 cup Coconut oil

Mix 3 eggs in bowel season with salt and pepper set aside. Turn Oven on for 350. Wash mushrooms and de-stem and spoon out mushroom. Set aside and chop finely.  Peel sweet potato and grate. Next grate the zucchini. Put mushrooms on foil with a little oil on pan bake for 15 minutes.

In a large pan on the stove, heat pan adds 1/4 cup of oil and cook sausage patties for 3 minutes. Take a fork and crumble patties. Add in onions and mushrooms mixture cook for 1 minute.  Next toss in sweet potato and zucchini cook for 5 minutes keep on medium heat. Toss in eggs mixture and cheese. Scramble the mixture. Take mushrooms out of the oven and spoon about one cup of mixture into each mushroom.

In a clean pan add oil and fry 4 sunny side eggs for about 3 minutes cover with lid. Put each egg on the mushroom sunny side up. Add favorite bread on side and add 1/3 cup of scramble as a side on plate.
